Top 10 Dinners

This page is a collection of my Top 10 Favorite Quick and Easy Dinners.  I may change or update this list, but for now, consider it a great answer to the question "What's for dinner?" 


10.  Chipotle Pretzel Chicken with Southwest Corn Saute 
      An easy baked chicken dish with a spicy side of corn, you can back down the heat to make this pleasing to every palate.  

9.  Asparagus & Jack Cheese Frittata
     A one-pan meal that works for breakfast, lunch, or dinner.  Easy enough to put together while supervising homework or catching up on phone calls, impressive enough to bring for brunch.  Vegetarian.

8.  Autumn Sausage Casserole
     Delicious all year round!  More of a stir-fried rice than a true casserole, the flavors in this dish convey "comfort" without major calories. 

7.  Chicken with Lemony Egg Noodles & Peas
     You could easily sub canned, drained tuna for the chicken in this dish if you're short on time or need some variety.  A hearty recipe that's good for you too!

6.  Corn Chowder with Kielbasa
    A household favorite, this chowder is welcome at our table year-round, even when it's warm outside!  Easy to put together and full of fantastic flavor, I'm confident that this will become a favorite in your family too!

5.  Butternut Squash Risotto
     Comforting, creamy, and delicious, butternut squash risotto comes together in no time.  To save even more time, pick up cubed butternut squash in your freezer section.  Vegetarian.

4.  Tortellini Soup with Sausage & Escarole
     One of my favorite soups, this combines spicy sausage, dark green vitamin-rich escarole, and cheesy tortellini all in one dish.  With a garlicky broth and simple ingredients, this dish is a weeknight standby.  Eliminate the sausage to make it vegetarian.

3.  Prosciutto & Spinach Panini with Pesto
     Pressed sandwiches are a great pick when you're pressed for time (ha!) and this panini is full of things that are good for you!  Take a little help from the store by buying pesto if you don't have time to make your own.  Make it vegetarian by skipping the prosciutto.

2,  Spinach Artichoke Chicken Pizza 
     Cheesy, creamy, and full of veggies, this will change "pizza night" forever.  Opt for whole wheat crust and low-fat ingredients to keep it healthy, skip the chicken to make it vegetarian.

1.  Beef with Broccoli
     Takeout gets a makeover when you put it together yourself.  No MSG, no unhealthy fats, and it hits the table quicker than delivery.
